You need to go to:
Stock, Item Master Definition, Open Part, Page 1, bottom right hand side, select Hide from Lists.
It doesn't stop anyone entering the part and amending it.
It does stop it displaying in any part lists unless the Include Hidden Records is selected in the search query.
